Pumpkin Cheesecake

crust:
1 1/2 cups graham cracker crumbs
5 T. melted butter
1 T. sugar

mix together and press into 8" spring form pan.
Bake for 5 minutes at 350 degrees

filling:
3 - 8oz cream cheese softened
1 c. sugar
1 tsp vanilla
1 c. pumpkin
3 eggs
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. allspice

Combine cream cheese, sugar, and vanilla. Mix until smooth. Add pumpkin, eggs, and spices. Beat until smooth and creamy. Pour into crust. Bake 60 to 70 minutes until set.

Cook in a water bath.
